Hi! We’re Jen & Alastair
and we are Treble!

Blending is at the heart of what we do here, it even inspired our name!

Treble is a blend of our surnames (Treliving & Noble). 

Craft beer brought us together when we met years ago at a Belfast based microbrewery and the rest, as they say, is history!

Both entrepreneurial by nature, we have owned our own businesses but wanted to collaborate on something together. 

We have always loved travel and one of our favourite things is experiencing beer culture in different countries. We attend many beer festivals and we’ve met some amazing brewers who have inspired us with their creativity and dedication to the craft.

Alastair is the CFO – Chief Fermentation Officer.  He leads on recipe development, brewing and cellaring and quality control.

Jen is the Chief Storyteller. She leads on marketing and comms, customer experience and data analytics

Louis is the Chief Troublemaker. His dream is to start an exclusive beer club offering special beers and merch to members.

As a small, independent business, we work together on every aspect of the business, a true labour of love.

We love the incredible independent food & drink being produced across Ireland, and the community we have found.  We’re so excited to share our beers with you!

Why Saison?

We brew a variety of European style beers and our house style is saison. If you’ve never tried a saison, you may be wondering why we love it so much!  

Saison was traditionally brewed in the Wallonia region of Belgium, and northern France in the 19th century. Brewed in winter for consumption in the summer, it was made specifically for the saisonnaires, the farm workers who needed a thirst-quenching drink after hours of hard labour in the sun.

It was the beer of the people.  Each farmer/brewer had their own recipe and it was largely based on what they grew on their land.

What makes Saison to enjoyable to drink?  For us, it comes down to 3 things:

Accessibility

Our saisons come in a range of strengths, from a very low alcohol saison like our table beer (2.8%), our grisette (4.2-4.8%) and higher strength saisons with more depth and richer flavour (+5%)

Drinkability

Saison is a highly attenuated beer with a dry finish & little residual sweetness, making it very refreshing without a lingering aftertaste. Crisp & balanced, saison is a highly drinkable beer style

Versatility

It can take on various flavours without losing its base. We love to experiment with different fruits, herbs & vegetables and blend them with saison flavours. From a crisp, refreshing saison on a hot summer day, to a warm, robust saison on a dark winter night, this style complements all seasons.

Malt & hops

Beer is an agricultural product and relies on quality ingredients to make it delicious. We use a range of malts from UK- based expert maltsters, offering premium quality base and specialty malts. 

The hops we use are grown in the UK and Europe as well as smaller amounts of US and New World hops to give a modern flavour to the traditional styles.

Yeast

The styles of beer we create allow the magic of yeast to really shine. Like any recipe, all ingredients are important and play a role, but for our beers, the yeast is really the showstopper. 
Yeast converts the sugar in the wort into alcohol.

By treating it with love, care and respect, we work with the yeast to highlight the best aroma, mouthfeel and flavour in each beer.

Fruits, Herbs & Vegetables

We love the creativity of beer, mixing different malts and hops, and different yeast strains to create our beers but we also love integrating our garden into some of our recipes.

Our garden & mini orchard provide a variety of berries, cherries, plums, herbs and vegetables that bring freshness and seasonality to our beers.
